Blueberry Peach Crisp

  • ¾ cup plus 2 tablespoons sugar - keep divided
  • 1 teaspoon baking powder
  •  ½ teaspoon table salt
  • ½ teaspoon ground cinnamon
  • 1 fresh large egg - lightly beaten
  • 3 cups peeled and sliced fresh peaches
  • 2 cups fresh or frozen blueberries
  • ¼ cup melted butter for drizzling


Preheat oven to 375., In a medium bowl, combine flour, ¾ cup of the sugar, baking powder, salt and cinnamon.  Add egg.  Mix with fork until mixture resembles coarse crumbs., Place peaches and blueberries in large bowl. Add the remaining 2 tablespoons sugar.  Toss to coat., Place fruit mixture in greased 8 or 9-inch square baking dish.  Sprinkle with crumb mixture.  Drizzle with butter.  Bake 35 – 40 minutes or until top is lightly browned.
